Ce rapport porte principalement sur la microbiologie, la chaîne biochimie des aliments et des eaux au terme d'un stage d'un mois effectué au Laboratoire de Sécurité Alimentaire et d'Hygiène de l'Environnement (LSAHE) de l'Institut Pasteur de Dakar. Los cambios físicos, químicos y organolépticos en macarela (Scomber japonicus) y sardina (Sardinops sagax, Etrumeus teres) saladas durante el procesamiento y subsecuente almacenamiento en salmuera son descritos. Effects of environmental conditions on the sessile existence of an estuarine sediment bacterium. ArchiMer

A submerged glass coverslip technique was developed to determine dissolved organic nutrient uptake by adherent cells of a sediment isolate of Enterobacter cloacae . Cells which colonized the coverslips in swirling culture flasks during anaerobic growth remained firmly attached during manipulations employed to determine uptake of radiolabeled glucose by the adherent population. The attached cells were capable of a more rapid rate of glucose uptake than free cells. Lineweaver-Burk plots demonstrated different glucose uptake kinetics for the 2 cell populations. The data suggest that physiological changes occur in cells soon after they become attached to surfaces. These changes appear to enhance the metabolic activity of the adherent population.

Effet de l’addition du thym, du laurier et du romarin sur la conservation de l’anguille fumée OceanDocs

L’effet de l’addition de trois types d’additifs naturels: le thym (Thymus vulgaris), le laurier (Laurus nobilis) et le romarin (Rosmarinus officinalis) sur l’amélioration de la conservation de l’anguille fumée a été étudié. Une comparaison des caractéristiques microbiologiques, physicochimiques et organoleptiques du produit, par rapport au lot témoin, fumé sans additifs a été réalisée durant 5 semaines à 4 °C. The Port Complex of Maranhão (PCM) is the second largest port complex in Brazil, receiving ships with large volumes of ballast water. To evaluate the microbiological quality of its waters, physicochemical parameters (pH and salinity), the number of coliforms (thermotolerants and totals), and the presence of enterobacterias and diarrheagenic Escherichia coli strains were analyzed. Se presenta un estudio microbiológico de las aguas de Ensenada Guayaquil y Bahía Chile, con el propósito de determinar presencia de enterobacterias en las mismas; se detectó la existencia de tres grupos: Escherichiae, Yersinieae y Klebsielleae. Se estima que eventualmente dicha presencia es ocasionada por la presencia de la actividad humana en el área y por el aporte de los excrementos de las aves transportadas en aguas provenientes de deshielos en el verano.

As a result of an agreement signed by the Municipal Government of Baradero Buenos Aires Province, Argentina and the INIDEP, the sanitary quality of the Baradero River waters was studied and fish safety assessed. Results of five field surveys carried out between 1993 and 1997 are studied. Organochlorine and organophosphorate pesticide residues, as well as traces of heavy metals were analyzed in 49 fish specimens and aerobic heterotrophic bacteria (AHB), total coliform bacteria (TC) and fecal coliform bacteria (FC) were counted out in 7 sampling stations placed on the coast and the riverbed. Mientras predominan las aguas salobres en la Ciénaga Grande se destacan las formas bacterianas halófilas. Durante la época de lluvias (invierno, disminuye la salinidad, sin embargo las formas halófilas aumentan en número. La reproducción de bacterias de agua dulce se inicia sólo cuando la salinidad llega bajo un valor de un 10°/o/o. Estas alcanzan su valor máximo temporáneo en salinidades de un 3°/o/o. Al mismo tiempo disminuyen las formas halófilas. Observaciones sobre contaminación fecal se realizaron en las aguas de la Ciénaga. Como indicador se utilizó Escherichia coli. Etude de la résistance aux antibiotiques des bactéries isolées de "mytilus galloprovincialis. OceanDocs

L’étude des résistances vis-à-vis de différentes substances antibiotiques pour des espèces bactériennes (aérobies et anaérobies) isolées chez Mytilus galloprovincialis a été réalisée par la méthode standard de l’antibiogramme. Ainsi, 50 souches bactériennes aérobies et 20 souches anaérobies appartenant à plus de 25 espèces différentes ont été isolées et testées. Les résultats obtenus montrent des profils à plusieurs résistances vis-à-vis des différentes familles d’antibiotiques testés. Les résultats obtenus révèlent des profils à 12 résistances différentes notamment chez l’espèce anaérobie (Propioni acnes). Before the building of an (OTEC) power plant, and experimental station was built near the entrance of the Bay of Brest in order to do preliminary studies. Using these facilities, the bacterial colonization of three substrata (stainless steel UB6, aluminium AG4, polycarbonate filters) was studied in an open seawater system, with a speed of 0,7 m s super(-1). The study was performed between May 1983 and May 1984, including seven experiments of 15 days each. Isolement et identification de vibrions halophiles d'une station experimentale de mariculture ArchiMer

110 Vibrio strains were isolated, at various times of the year, from samples of sea-water supply, breeding-tank water and discarded fish used as food at the breeding stations. From the results obtained by the biochemical and cultural tests, it was possible to identify most of the isolated strains as Vibrio anguillarum . Strains with intermediate characteristics, above-all positive saccharose, proved to be numerous. The authors discuss the occurrence, in particular environments such as those being studied, of atypical or intermediate vibrio strains which are difficult to classify.

Microbes in nature are often concentrated on surfaces where they exist in microcolonies of mixed composition. The assay of these mixed microbial consortia by utilizing biochemical components eliminates the problems associated with cultural selectivity of viable counts or the requirement for quantitative release from surfaces required in some microscopic techniques. ABSTRACT: The present research aimed to optimize the process of osmotic dehydration (OD) of ginger with hypertonic sucrose solution employing response surface methodology. A 23 experimental planning was carried out and 17 experimental assays were performed based on three independent variables (temperature, concentration of the osmotic solution and immersion time) and three dependent variables (moisture loss (ML), solids gain (SG) and dehydration efficiency index (DEI)). Using water samples from several observation levels of a brackish lagoon, statistical solutions are offered for the sampling optimisation of bacteria viable counts. The variability between plate count is studied by the mean of the Taylor's power law. The sampling strategy optimisation, including several sources of variability, is realized by hierarchical analysis of variance and the estimation of the sampling cost of each source. Seasonal variation of microbial population from sediments of Vellar Estuary, South India. ArchiMer

A seasonal study on the occurrence and distribution of total aerobic microbial population (TMP), total aerobic heterotrophic bacteria (THB), actinomycetes and fungi in the sediments of Vellar Estuary, South India (11 degree 29'N 79 degree 46'E) was carried out during Jan. to Dec. 1975. Sediment samples were collected at monthly intervals, from 4 stations and analysed microbiologically. In general, bacterial population was found to be dominant followed by actinomycetes and fungi. The max peak for TMP, THB and fungi were recorded in Nov. in all stations. Monsoon season supported TMP, THB and fungi to a high level and it was summer for actinomycetes. Selected bacterial strains protect <i>Artemia</i> spp. from the pathogenic effects of <i>Vibrio proteolyticus</i> CW8T2 OMA

In this study <i>Vibrio proteolyticus</i> CW8T2 has been identified as a virulent pathogen for <i>Artemia</i> spp. Its infection route has been visualized with transmission electron microscopy. The pathogen affected microvilli and gut epithelial cells, disrupted epithelial cell junctions, and reached the body cavity, where it devastated cells and tissues. In vivo antagonism tests showed that pre-emptive colonization of the culture water with nine selected bacterial strains protected <i>Artemia</i> juveniles against the pathogenic effects. The dispersion of adhered marine bacteria by pyrophosphate and ultrasound prior to direct counting. ArchiMer

A technique has been investigated for dispersing adhered marine bacteria from various surfaces prior to direct counting. The bacterial cells were initially preserved and strengthened by use of 3.7% formaldehyde (v/v final concentration). Seawater samples were then treated with 0.001 M of tetrasodium pyrophosphate (final concentration), a sequestering and deflocculating agent. Surface sediment and kelp disc samples were treated with 0.01 M tetrasodium pyrophosphate (final concentration) after having been suspended in 0.44 M sodium chloride solution. These samples were incubated for 15-30 min. Subsequently, the samples were treated with ultrasound (100 W) for 30 to 45 s. An study of hydroclimate variability in the region of the gulf of Batabanó analyzing the water and air monthly temperatures series from 1982 to 2008 was carried out.
